Winter Fruit Salad

The best of the season is taken by this winter fruit salad and made into a light and refreshing side dish filled with color and flavor.

Salad
 3 cups pineapple, cubed
 1 cup pear, diced
 2 cups mandarin orange
 1 cup kiwis, peeled, quartered and sliced
 ½ cup pomegranate arils
Dressing
 3 tbsp lemon juice,freshly squeezed
 ½ tsp teaspoon lemon zest
 3 tbsp honey
 1 tbsp poppy seeds
 fresh mint leaves, chopped

In a large bowl or salad platter, combine the pineapple, pears, kiwi, mandarin oranges, and pomegranate arils.

Whisk the honey, lemon juice, lemon zest, and poppy seeds together in a small bowl.

Pour the dressing over the salad and toss gently, to coat.

Cover and refrigerate for 15-30 minutes.

If needed, garnish it with mint leaves.
