Winter Fruit Salad

One of the healthiest things you can eat in this freezing season is a light, delicious fruit salad, made from the in-season fruits available during the winter months. Since fruits are sources of many unconsumed vital nutrients, including potassium, dietary fiber, vitamin C, folate (folic acid).  aFruits, and a wide variety of health-boosting antioxidants. 
Eating a fruit-rich diet will lower blood pressure, reduce the risk of heart disease and stroke, avoid certain forms of cancer, reduce the risk of eye disorders, and have a beneficial impact on blood sugar, decrease body fat, aid digestion, and metabolism

Salad
 3 cups pineapple, cubed
 1 cup pear, diced
 2 cups mandarin orange
 1 cup kiwis, peeled, quartered and sliced
 ½ cup pomegranate arils
Dressing
 3 tbsp lemon juice,freshly squeezed
 ½ tsp teaspoon lemon zest
 3 tbsp honey
 1 tbsp poppy seeds
 fresh mint leaves, chopped

In a large bowl or salad platter, combine the pineapple, pears, kiwi, mandarin oranges, and pomegranate arils.

Whisk the honey, lemon juice, lemon zest, and poppy seeds together in a small bowl.

Pour the dressing over the salad and toss gently, to coat.

Cover and refrigerate for 15-30 minutes.

If needed, garnish it with mint leaves.

Garnish it with mint leaves, and serve immediately.


Best to eat it fresh, within 2 hours
