Tomato & Thyme cod

Codfish is a low-fat, nutrient-dense food that can bring many health benefits for you. In this recipe making this healthy fish with thyme and tomato, its get ready within 20 minutes, great dinner option, at any weeknight.

Tomato & thyme cod

 1 tbsp olive oil
 1 onion , chopped
 400 g can chopped tomatoes
 2 tsp light brown soft sugar
 4 thyme sprigs, leaves stripped
 1 tbsp tbsp soy sauce

In a frying pan heat 1 tbsp of olive oil, add the onion, and fry for 5-8 minutes until lightly browned.

Stir in can chop tomatoes.

Add sugar, thyme, and soy in the tomatoes, then bring to the boil.

Simmer the sauce for 5 minutes,

Place cod fillets on top of the sauce, cover, and cook on a gentle heat for 8-10 minutes until the fish flakes easily.

Serve with potatoes and a little crème fraîche or butter.
