Mexican Chicken Cheese Burger with Fresh Avocado Guacamole

 1 chicken breast
 1 tsp chipotle paste
 1 tbsp fresh lime juice
 12 slices cheese
 12 lettuce, leave
 1 brioche bun , halved
For the guacamole
 ½ avocado
 2 cherry tomatoes , chopped
 3 pickled jalapeño slices, chopped
 ½ garlic clove , finely grated
 1 tbsp fresh lime juice

Put the chicken breast between two pieces of cling film and bash with a rolling pin or pan up to about 1 cm thick. Then transfer the chicken is to the large bowl. I Mix the chipotle paste with half the lime juice. Spread the paste over the chicken and use your hands to rub it into the chicken.

Toast burger buns, cut-side down, for 1-2 minutes on the griddle pan.

Top the bun base with lettuce leaves, the chicken breasts, and a big spoonful of guacamole, then sandwich with bun top
