Keto Bread

Before going for the recipe let me explain new to keto, what is keto. A low-carb, moderate-protein, higher-fat diet is a keto or ketogenic diet. The idea is for you to get more protein and fat calories and less from carbs. You cut most down on readily digestible carbohydrates. If you eat less than 50 grams of carbohydrates a day, your body will gradually run out of fuel (blood sugar) that can be used easily. Generally, it takes 3 or 4 days. Then you'll start breaking down protein and fat for energy, which can contribute to weight loss. 

This means if you are on keto, you can enjoy most of your favorite fats and protein.

But what about the most important staple food product to many cultures over the centuries "Bread". If you are on a keto diet you can't have regular bread, So it means no yummy lunch sandwich, no delicious breakfast toast with your nutella or peanut butter, no juicy burgers, no chapatis, no tortillas???

Thankfully is not the case, the keto bread recipe is here to save your bread carvings.

 8 large egg
 ½ cup butter (melted)
 ¼ tsp sea salt
 ¼ cup coconut flour
 1 cup almond flour
 ¼ tsp Xanthan gum

Oven preheat to 180 c

Cover a loaf pan of 8 1/2 x 4 1/2 in (22x11 cm) with baking paper, with extra hanging over the sides for quick removal, later.

In a big food processor, mix the almond flour, coconut flour, baking powder, xanthan gum, and sea salt. Pulse till mixture combined.
Add the egg yolks and the melted, butter, and pulse until smooth. Pulse, scrape down the sides as needed, until crumbly.

Put the eggs white in a big bowl and beat them on high, use a hand mixer to beat the egg whites until they form stiff peaks.

Carefully transfer the mixture  from the food processor into the bowl with the egg whites, and fold gently to keep the mixture as fluffy as possible. Till there are no streaks.

Scrape into the lined loaf pan.

Bake for 45 minutes or until a clean skewer comes out of the middle.

Cool completely before removing from the pan.
Slice into 16 thin slices and place in the freezer in an airtight jar for up to 7 days


It's not easy to spare one hour, to just make bread, which we use to grab from the nearest supermarket before the following keto diet. But don't get demotivated buy yourself a fresh bread either for a sandwich, pizza, burger or you name it, from  ketobreads.net
