Healthy Homemade Bubble Tea

These bracing cups of soft, fluffy, chewy refreshment — also known as "boba" and "pearl milk tea"  originated in Taiwan— have become a go-to beverage not only in Taiwan, but also in Asia, North America, and Europe, over the last few decades.
Bubble Tea refers to a wide range of cooling fruit and milk teas enjoyed ice cold or hot with chewy tapioca balls.

Healthy Bubble Tea

Black Tea
 6 black tea bags
 2 cups water
Tapioca pearls
 ½ cup medium black tapioca pearls
 4 cups water
Sugar syrup
 2 cups brown sugar
 1 cup water
For assembling
 ¼ cup milk of your choice

Add tea bags in boiling water and cook for a minute or two over medium-high heat. remove from the heat and let the tea cool to room temperature. (Remove tea bags as the tea cools down)

Bring 4 cups of water to a boil, then stir in the tapioca pearls. Wait for the pearls to rise to the surface after stirring them. Cook till pearls get softened for about 20 minutes.

Mix sugar and water and cook over medium-high heat, till the sugar is totally dissolved. Remove the saucepan from the heat and set it aside to cool.
Soak the pearls for 30 minutes in sugar syrup, then store the bubbles and syrup separately.

In two glasses, divide the pearls and ice, then pour in one cup of tea in each glass and add sugar syrup, and milk as per taste.

Stir with a large boba straw, then serve.
