Grilled Chicken Breast with Avocado Salad

Try this flavorful, and easy to make recipe with the goodness of grilled chicken and avocado.

Chicken breast with avocado salad

For Salad dressing
 2 tbsp extra virgin olive
 ½ lemon (juiced)
 1 tsp honey
 1 tsp wholegrain mustard
 salt (as per taste)
 black pepper (as per taste)
For Salad
 ½ red onion, thinly sliced
 1 tomato , chopped
 1 tbsp parsley, roughly chopped
 1 tsp red wine vinegar
 ½ avocado , diced
 1 tsp smoked paprika
 1 tsp olive oil
 1 chicken breast

For dressing, In a small bowl blend the mustard with the honey and the lemon juice. Stir in extra virgin olive oil and season with salt and pepper. Set aside.

Rub the olive oil and the paprika all over the chicken.

Heat the grill to medium.

Cook chicken for 4-5 mins each side on the grill until lightly charred and cooked through.

Mix the salad ingredients together, Drizzle the salad dressing lightly all over the salad.

Thickly slice the chicken and serve with salad.
