Chocolate Chia Seed Pudding

Chia seeds are full of essential nutrients, in spite of their small size. They are an excellent source of antioxidant-rich omega-3 fatty acids and include protein, iron, and calcium. Chia seeds can improve the digestive system — studies have shown that chia seeds can support people with different diseases and health conditions, including type 2 diabetes, high blood pressure (hypertension) and depression.

Enjoy this nutritious seed in mouthwatering Chocolate Chia Seed Pudding. It is a simple and light dessert when you're having a craving for chocolates. There are few ingredients and you probably already have them. It's great for breakfast, a snack, or a dessert!

Yields4 Servings
 4 tbsp cocoa powder
 ½ cup chia seeds
 4 tbsp maple syrup
 2 tsp vanilla extract
 1 ½ cups Coconut Milk
 1 pinch sea salt

Add the cacao powder, maple syrup, salt, vanilla extract, whisk to be mixed in a medium-sized bowl.

Then add a small amount of milk at a time and whisk until a paste develops. Then add the remaining milk and whisk until smooth.

Add chia seeds and whisk to mix once again.

For the chia seeds to gel, leave the mixture in the bowl for 20 minutes without stirring. Whisk it up one more time after 20 minutes.

Cover the bowl and put it over night in the refrigerator or at least 3-5 hours (until a pudding-like consistency is achieved). Giving the mixture an extra whisk / swirl can also be beneficial after it has been in the refrigerator for 30-45 minutes.

Serve in glasses of small size dessert. Top with fruit, chocolate shavings or other garnishes you want.
