Do you like to be healthier but can not give up chips? Try some low-fat, crispy tarragon baked carrots
Heat oven to 200C.
Peel carrots and cut them into ‘fries’, about 1cm thick, and mix with cornflour and a pinch of black pepper.
Toss with olive oil, scatter over a parchment-lined baking tray in one layer, and bake for 40-45 mins, flipping halfway.
Mix a little salt with tarragon and toss through the cooked fries.
Whisk the mayo, chipotle and lime juice together in a small bowl.
Serve carrot fries with sauce.
