Avocado toast has come to describe what makes this decade's food trends: It's balanced and yet always so slightly indulgent. There is no doubt that Avacado is good to go alone on toast but we are having a twist of poached egg and feat on Avocado toast in this recipe.
Fill a large saucepan with water, add the vinegar, and over high heat bring to boil. Reduce heat once it boils so that the water simmers, then use a spoon to swirl the water into a whirlpool. Crack the eggs in and cook for 2 1/2 minutes.
Toast up your bread slice until it is golden and firm.
Remove the pit of your avocado. Scoop out the flesh using a large spoon. Place it in a bowl and mash it with a fork until it's as smooth as you like it.
Mix in feta, chili flakes and lemon juice, and season well with black pepper.
Spread the avocado mixture on top of your toast. Pile a poached egg on top of each.
