A little sunny corner cafe in Sydney, Australian restaurateur Bill Granger served his first plate of smashed avocado on toast 26 years ago. It is a dish that has become a global trend as well as a millennial cliché, emblematic of the growing popularity of breakfasts and brunches in the Australian Style.
Avocado toast has come to describe what makes this decade's food trends: It's balanced and yet always so slightly indulgent. Avocados are a good source of fiber and varied minerals and vitamins such as vitamin C , vitamin K, folate, and potassium. But their best feature is their monounsaturated fats, which are heart-healthy.
There is no doubt that Avacado is good to go alone on toast but we are having a twist of poached egg and feat on Avocado toast in this recipe.
Fill a large saucepan with water, add the vinegar, and over high heat bring to boil. Reduce heat once it boils so that the water simmers, then use a spoon to swirl the water into a whirlpool. Crack the eggs in and cook for 2 1/2 minutes.
Toast up your bread slice until it is golden and firm.
Remove the pit of your avocado. Scoop out the flesh using a large spoon. Place it in a bowl and mash it with a fork until it's as smooth as you like it.
Mix in feta, chili flakes and lemon juice, and season well with black pepper.
Spread the avocado mixture on top of your toast. Pile a poached egg on top of each.
